For 1 liter of tzatziki sauce:

  • 1 L of Greek yoghurt
  • 1 cucumber, grated
  • 5 cloves of garlic, chopped
  • 2 tablespoons of olive oil
  • 1 tablespoon of vinegar
  • salt and pepper

Start by hanging the yoghurt in a clean, rinsed cloth (make sure the cloth is free of soap residue) for a whole day. Grate the cucumber and drain it, then add some salt and put it in the fridge, preferably also a day in advance. The following day, mix the chopped garlic and the (dry) cucumber with the yoghurt and season to taste with olive oil, vinegar, salt and pepper.
